origin Story
In August 2022, I had a rock climbing accident that resulted in a severe fracture to my sacrum. Although the accident was terrifying and the resulting pain was almost unbearable, a silver lining of the accident was recognizing that I wanted to devote my professional life to spreading joy and tackling climate change. In the aftermath of the accident, I was teaching middle school science and eating a sandwich each day for lunch. As a vegetarian, I typically bought plant-based deli slices, but I was disappointed in the taste and the plastic waste. My wife Rachelle and I began making our own, and after a lot of tinkering, we developed a delicious recipe. We shared our plant-based deli slices with friends and they said they wished they could buy them. With a great deal of community support and enthusiasm, I launched Mighty Mudita in July 2023.
Now I craft our products at a shared commercial kitchen in Hardwick, Vermont with an amazing teammate, Jennifer Cornelius. Our name, Mighty Mudita, is a double-barreled reference to joy. “Mighty” conveys cheerful energy and “Mudita” means “empathetic joy” in Sanskrit. In every bite, we hope you experience joy and feel the sense that everyone can be Mighty.

MEET THE MAKERS
Hi, I’m Andrew! I am the owner of Mighty Mudita.
I live in Burlington, Vermont with my wife Rachelle. I grew up in Wisconsin, and ate enough ham and cheese sandwiches in my teenage years to feed a small army. Over time, I shifted to plant-based proteins for my health and for the environment. Rachelle and I used to buy plant-based deli slices at grocery stores, but we were dismayed by the amount of plastic waste and processed foods. A few years ago, we started making delicious plant-based deli slices at home, and I started Mighty Mudita in the summer of 2023.
Before Mighty, I taught middle and high school science. I have a degree in chemistry and a master’s and PhD in science education. My background in education helps me make the slices with an analytical mind and a warm heart.
Hi, I’m Jennifer! I am Mighty’s production specialist.
I live in Vermont's beautiful Northeast Kingdom, where Andrew and I produce our Mighty Mudita products. I began eating plant-based proteins over a decade ago, when there was much less variety on the market, and I have loved getting to help produce a broader diversity of delicious vegan protein and bring joy to the community by doing so! Before Mighty, I worked in both the back-of-house and front-of-house spheres of catering, as well as in youth mental health.
